I hope that this blog finds you all well!

Shrimp in Love Pasta

Shrimp in Love Pasta

Ingredients
4 oz. linguine, uncooked
1 T. butter
1/4 c. shallots, fine dice
8 oz. shelled and deveined shrimp
2 medium tomatoes, chopped (about 1 cup)
1/2 cup Cream Cheese Spread
1-1/2 cups fresh, torn, clean spinach
1 T. fresh basil, chopped

freshly grated Parmesan cheese COOK linguine as directed on package (fresh pasta: bring water to a boil, add pasta and stir. When it returns to a boil, done!).

MEANWHILE, heat butter in a large skillet on medium-high heat and sauté shallots until translucent. Add shrimp, tomatoes and cream cheese spread; cook and stir 3 to 4 minutes or until shrimp are cooked through and mixture is well blended.

DRAIN pasta; place in large bowl. Add spinach; toss lightly. Stir in shrimp mixture. Stir in fresh basil, top with grated Parmesan and serve. Enjoy!

Homemade Cinnamon and Coconut Pancakes for 2

I wrote this recipe this morning because I wanted some pancakes, but I wanted something different. Also, I didn't want to feed an army! Just have a few for now and a few for later. This recipe makes about 6 silver dollar pancakes. Children would love them!!! Enjoy!

Cinnamon and Coconut Pancakes
2 servings

1/4 cup + 2 T all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 T. granulated sugar
1 tsp. korintje cinnamon (this is best for breads, but whatever kind of cinnamon you have is fine)
1/2 tsp. coconut extract
1/4 tsp. vanilla extract
1/4 c. + 1 T. low-fat evaporated milk
1 egg, beaten
2 1/4 tsp. butter, melted (don't worry if it's not exact - I guestimated how much I used and this is pretty close)

In a medium bowl, sift together your flour, baking powder, cinnamon, sugar and salt.
Pour in your milk and then your butter so that the butter is cool enough that it doesn't cook your egg.
Add your egg.
Whisk briskly until smooth (this takes no time!).
Heat a large skillet over medium heat.
Spray with non-stick spray and pour about 1/8 c. to 1/4 of a c. of batter into your skillet.

**Be sure the pancakes don't touch or they'll have odd shapes!**

When you see the outside edges bubbling and a tiny bit of batter bubbling in the center of your pancake, flip immediately.
Cook the other side for 30 seconds to one minute, only until lightly browned (check periodically to be sure it doesn't get too brown).
Serve with honey, syrup, sliced strawberries or your favorite fruit, Nutella or whatever you like!

Giant Cowboy Cookies

These oversized cookies combine favorite trail mix ingredients with a classic oatmeal cookie. The precise flavor--from M&M's to dried fruit--is the chef's choice.
Ingredients

1 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup butter, at room temperature
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla extract
2 cups rolled oats
2 1/2 cups total mix-ins:
semisweet chocolate chips, M&M's, chopped walnuts or other nuts, and/or raisins or other dried fruit
Kids' Cooking Skills:
Use this recipe to teach your child how to customize cookies with favorite ingredients, use a spatula to fold in ingredients, and flatten cookies with a wet glass.
Directions

1. Heat the oven to 350° F. In a large bowl, mix together the flour, baking powder, baking soda, and salt.
2. In a separate bowl, cream together the butter and both sugars, then beat in the eggs. Stir in the vanilla extract. Finally, stir in the flour mixture.
3. Using a spatula, fold in the rolled oats until thoroughly.
4. Bake 12-14 minutes or until just browned around the edges.
