Shrimp in Love Pasta

Ingredients
4 oz. linguine, uncooked
1 T. butter
1/4 c. shallots, fine dice
8 oz. shelled and deveined shrimp
2 medium tomatoes, chopped (about 1 cup)
1/2 cup Cream Cheese Spread
1-1/2 cups fresh, torn, clean spinach
1 T. fresh basil, chopped

freshly grated Parmesan cheese COOK linguine as directed on package (fresh pasta: bring water to a boil, add pasta and stir. When it returns to a boil, done!).

MEANWHILE, heat butter in a large skillet on medium-high heat and sauté shallots until translucent. Add shrimp, tomatoes and cream cheese spread; cook and stir 3 to 4 minutes or until shrimp are cooked through and mixture is well blended.

DRAIN pasta; place in large bowl. Add spinach; toss lightly. Stir in shrimp mixture. Stir in fresh basil, top with grated Parmesan and serve. Enjoy!

I am very excited to learn that he is moving to a city that he and his wife love AND he's going to be a DADDY!! So, changes are on the way. Thank you for your patience.

In other news, my cookbook is nearly done!! I have only a few more pages to tweak and then my graphic artist will be able to forward the files over to the publisher! "Passion on a Plate: Affordable and EASY Gourmet" is coming SOON!! I am so excited!!

This cookbook has been such a labor of love. I have worked very hard on it and while it isn't the Southern cooking that my great-grandmother always prepared, it is her influence that has helped me to create delicious, gourmet recipes with items that you will already have in your pantry - so grocery shopping will be kept to a minimum! I don't know about you, but I think grocery shopping is my least favorite chore. Give me a load of laundry over grocery shopping any day of the week!! (Unless it's an international foods market and I can play around with new found ingredients, of course!)

How's everyone doing?!

Hello, friends!

Thank you so much for stopping by my blog. Things have been so busy lately, but in a GREAT way. I am having so much fun sharing my "kooking" with you!! I promise that I will be uploading a new show soon!

The most recent news is that I will be preparing one of my favorite chocolate desserts on Paula Deen's show, "Paula's Party"! The taping is this Wednesday, but the show won't air until September or October. I will certainly keep you posted on exact dates.

Another exciting milestone is that the photography is complete for my cookbook and my graphic artist is eager to get started on the layout of the cookbook. She is so incredibly talented, so I know that it's going to be great! It will be a fun, retro-style cookbook, but the recipes are some SERIOUS food! Easy, affordable and sure to inspire your passion for "kooking"! Be on the lookout for it. It should be complete within the next 30 days! It's been a lot of hard work, but some of the most fun!

My photographer, Erin Connelly, has been GREAT; Mary Hester, my graphic artist, is nothing short of AMAZING and Michelle LaBranche, my illustrator for all of the gadgets I talk about, has been PHENOMENAL. I am SO fortunate to be able to work with such great people!

The cookbook, or "kookbook", if you will! It will be a throwback to the fifties. Why, you ask? Well, I was thinking..."Hmm...what would be fun to do, something completely different from anything else I've ever done and something that would be fun for everyone one else to look at/thumb through AND practical to use? And that's when I decided on retro. Fun without being too silly and very practical. Right up my ally! I can't wait for you all to see it!

More news...July 11th, 2007, will be the next cooking class - HANDS ON! - that I'm teaching at The Cook's Warehouse. Don't delay in signing up! It's summer seafood pasta! Learn how to prepare perfectly steamed mussels; shrimp that are sauteed just right - EVERY time and how to prepare scallops that MELT in your mouth EVERY time! Also, I will be discussing the benefits of cooking with fresh pasta, walking you through 3 different sauces and 3 diffent pastas! You don't want to miss it! There are three locations, so be sure that you are clear as to where the class will be when you sign up!

Atlanta is a wonderful city. I count myself so blessed to live in a place where I am surrounded by so much cultural diversity, so many fun things to do and a place where opportunity abounds.
